Stacked Oatmeal "Cake"- For Breakfast!

A personal "cake" for breakfast?!- I'm in!


The idea for this recipe came when I wanted to combine my two favorite things: 
Baked oatmeal & Vanilla Greek Yoghurt

The result? A lovely, fresh, sweet combination that feels like a treat- but can be made everyday!

The strawberry are a great compliment to any baked good and enhance the vanilla taste of the filling in this recipe.

Recipe: 
Strawberry Stacked Oatmeal "Cake"
Ingredients:
- 1/2 cup oats (quick oats were used)
- 1/4 cup applesauce
- 1/4 cup milk or water (I used vanilla soy milk)
- sweetener of choice
Topping:
- 2  chopped fresh strawberries
Directions:
Preheat oven to 385 degrees.
Combine dry ingredients, then add wet ingredients
Pour into a small loaf pan
Place strawberry pieces on top and press down slightly
Cook for 20 minutes
Set oven to "high broil" for 3 more minutes 
After cooled, cut "cake" in half
Spread 1/3 cup (or more!) vanilla Greek yoghurt on one slice and top with other
Enjoy!

*Notes on Sweetener: I would recommend using 1 tsp honey, sugar, or Splenda. In this recipe, I used one packet of Truvia.

Strawberry Kiwi Oatmeal Bread


                                      Nothing better than some fresh fruit in the morning!

This is a recipe for all the fruit lovers out there. It's baked oatmeal with (you guessed it!) strawberries and kiwi- a classic combo.


The bottom stays together as bread would and the overall texture is nice as it doesn't fall apart.


The recipe is quite simple; all it takes is mixing up a few ingredients (as one normally does to make oatmeal) and pouring them into a pan to bake in the oven.

Recipe:

- 1 sliced strawberry
- 1 sliced kiwi

I really enjoyed making (and eating!) this recipe because of its pleasant taste and since it is quite photogenic!

Muffins for Breakfast!

Mmmmm...muffins!

Now picture this:
Moist, sweet muffins with the sweet lemon taste you know so well...

That can only mean on thing- lemon poppy seed muffins!

Recently, I've been experimenting with baked oatmeal and thought to myself, why not try muffins? So here's a very simple recipe for lemon poppy seed muffins, a variation of the baked oatmeal from the Chocolate Covered Katie Blog (and who doesn't love her recipes?)




Lemon Poppy Seed Muffins (Single Serving-Makes 2 Muffins)

Ingredients:
- 1/2 cup oats (quick oats were used)
- 1/4 cup applesauce
- 1/4 cup milk or water
- 1 tsp lemon extract
- 1/4 tsp poppy seeds
- 1/16th tsp salt
*optional* sweetener of choice
Directions:
Preheat oven to 385 degrees.
Combine dry ingredients, then add wet ingredients
Pour into two muffin tin holes and cook for 20 minutes
Set oven to "high broil" for 3 more minutes
Enjoy!!

Notes: I used vanilla silk milk, so these were sweet enough that I didn't feel any sugar or extra sweetness was necessary. However, I would recommend adding 1 tsp of honey or sugar to complement the lemon taste of this recipe if you do not use a vanilla milk.

Possible Substitute: You can bake this all together in one 1-cup ramekin if you don't wish to have two muffins.

Oatmeal Time

Wait, this is a blog about oatmeal?? Sure it is! More specifically, this blog will change the way you think about oatmeal.

Right now, you may associate oatmeal with this definition:

oat·meal/ˈōtˌmēl/

Noun:
  1. Meal made from ground oats, used in breakfast cereals or other food.
Not too exciting, right? But oatmeal can be different; it can be crunchy, sweet, warm, smooth, voluminous- so many options!

Therefore, this blog was created to rev up basic oatmeal recipes and show the universality of this basic oat. (And hopefully inspire some doubtful readers to find an oatmeal variety that they love!)
